This hearty Instant Pot beef stew is rich in flavor and easy to make. Perfect for a comforting dinner!

- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Set the Instant Pot to sauté mode. Add olive oil and heat until hot.
- Add the beef cubes and brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 2-3 minutes.
- Add the browned beef back into the pot along with carrots, potatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir to combine.
- Close the lid of the Instant Pot and set it to manual high pressure for 35 minutes.
- Once the cooking time is complete, allow natural pressure release for 10 minutes, then quick release any remaining pressure.
- If you want to thicken the stew, mix cornstarch and water in a small bowl and stir into the stew. Set the Instant Pot to sauté mode and cook for an additional 5 minutes until thickened.
- Serve hot and enjoy!
Notes
- Feel free to add other vegetables like peas or green beans.
- For a richer flavor, you can deglaze the pot with a splash of red wine after sautéing the onions and garlic.
