Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and heat until hot.
  2. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 2-3 minutes.
  4. Add the browned beef back into the pot along with carrots, potatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir to combine.
  5. Close the lid of the Instant Pot and set it to manual high pressure for 35 minutes.
  6. Once the cooking time is complete, allow natural pressure release for 10 minutes, then quick release any remaining pressure.
  7. If you want to thicken the stew, mix cornstarch and water in a small bowl and stir into the stew. Set the Instant Pot to sauté mode and cook for an additional 5 minutes until thickened.
  8. Serve hot and enjoy!

Notes

  • Feel free to add other vegetables like peas or green beans.
  • For a richer flavor, you can deglaze the pot with a splash of red wine after sautéing the onions and garlic.
