A hearty beef stew made in a crock pot for a comforting meal.
Ingredients

- 2 lbs beef chuck, cubed
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet.
- Add beef to the crock pot.
- Mix in potatoes, carrots, onion, and garlic.
- Stir in beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve hot.

- Adjust seasoning based on your taste.
- Add peas or green beans for extra vegetables.
- Leftovers can be stored in the fridge for up to 3 days.
