Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Add onions and garlic; cook until softened.
  4. Stir in carrots and potatoes.
  5. Add beef broth, tomatoes, salt, pepper, thyme, and bay leaf.

  7. Remove bay leaf before serving.
