Description
A hearty and comforting beef soup made with tender chunks of beef and fresh vegetables.
Ingredients

- 2 pounds beef stew meat
- 1 onion, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add beef and brown on all sides.
- Stir in onions and garlic; cook until softened.
- Add carrots, potatoes, broth, tomatoes, tomato paste, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Season with salt and pepper before serving.

- Use any leftover beef for added flavor.
