Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Stir in onions and garlic, cooking until softened.
  4. Add tomato paste, thyme, salt, and pepper; mix well.
  5. Pour in beef broth and bring to a boil.
  6. Add carrots, potatoes, and celery; reduce heat to simmer.
  7. Cover and cook for 1.5 to 2 hours until the beef is tender.
  8. Adjust seasoning if needed before serving.
