Description

A quick and easy beef roast made in the Instant Pot.


Ingredients

  • 3 lbs beef roast
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 4 carrots, chopped
  • 3 potatoes, cubed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme

Instructions

  1. Season the beef roast with salt, pepper, and thyme.
  2. Set the Instant Pot to sauté and heat olive oil.
  3. Brown the beef on all sides, then remove from pot.
  4. Add onion and garlic, sauté for 2 minutes.
  5. Pour in beef broth, scraping the bottom of the pot.
  6. Place the beef back in the pot.
  7. Add carrots and potatoes around the beef.
  8. Close the lid and set to high pressure for 60 minutes.
  9. Allow natural release for 10 minutes, then quick release remaining pressure.
  10. Remove beef and vegetables, slice, and serve.
