Description
A quick and easy beef roast made in the Instant Pot.
Ingredients

- 3 lbs beef roast
- 1 cup beef broth
- 2 tablespoons olive oil
- 4 carrots, chopped
- 3 potatoes, cubed
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons dried thyme
Instructions
- Season the beef roast with salt, pepper, and thyme.
- Set the Instant Pot to sauté and heat olive oil.
- Brown the beef on all sides, then remove from pot.
- Add onion and garlic, sauté for 2 minutes.
- Pour in beef broth, scraping the bottom of the pot.
- Place the beef back in the pot.
- Add carrots and potatoes around the beef.
- Close the lid and set to high pressure for 60 minutes.
- Allow natural release for 10 minutes, then quick release remaining pressure.
- Remove beef and vegetables, slice, and serve.
Notes
- Adjust cooking time for larger roasts.
- Use fresh herbs for better flavor.
- Save leftover broth for gravy.
