Ingredients

- 1 lb ground beef
- 1 teaspoon taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- Sour cream (for serving)
- Salsa (for serving)
- Chopped cilantro (for garnish, optional)
Instructions
- In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
- Stir in taco seasoning and a splash of water. Cook for an additional 2 minutes, stirring to combine.
- On one half of each tortilla, sprinkle a mix of cheddar and Monterey Jack cheese, then add a portion of the beef mixture on top of the cheese.
- Fold the tortillas over to create a half-moon shape.
- In the same skillet, heat olive oil over medium heat. Place the folded quesadillas in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
- Remove from heat and let cool for a minute before slicing into wedges.
- Serve with sour cream, salsa, and garnish with chopped cilantro if desired.
Notes
- Feel free to add vegetables like bell peppers or onions for extra flavor.
- You can use pre-cooked shredded beef for a quicker version.
