Ingredients

  • 1 teaspoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Sour cream (for serving)
  • Salsa (for serving)
  • Chopped cilantro (for garnish, optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  2. Stir in taco seasoning and a splash of water. Cook for an additional 2 minutes, stirring to combine.
  3. On one half of each tortilla, sprinkle a mix of cheddar and Monterey Jack cheese, then add a portion of the beef mixture on top of the cheese.
  4. Fold the tortillas over to create a half-moon shape.
  5. In the same skillet, heat olive oil over medium heat. Place the folded quesadillas in the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
  6. Remove from heat and let cool for a minute before slicing into wedges.
  7. Serve with sour cream, salsa, and garnish with chopped cilantro if desired.
