Ingredients

  • 500g beef (chuck or brisket), cut into chunks
  • 200g rice noodles
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 carrots, sliced
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • Fresh cilantro, for garnish
  • Green onions, for garnish

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add chopped onion, garlic, and ginger. Sauté until fragrant.
  3. Add beef chunks and brown on all sides.
  4. Pour in beef broth, soy sauce, and fish sauce. Bring to a boil.
  5. Reduce heat and simmer for 1.5 hours until beef is tender.
  6. Cook rice noodles according to package instructions.
  7. In bowls, place cooked noodles and ladle the beef soup over them.
  8. Garnish with cilantro and green onions.
