Ingredients

- 500g beef (chuck or brisket), cut into chunks
- 200g rice noodles
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 2 carrots, sliced
- 4 cups beef broth
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sesame oil
- Fresh cilantro, for garnish
- Green onions, for garnish
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add chopped onion, garlic, and ginger. Sauté until fragrant.
- Add beef chunks and brown on all sides.
- Pour in beef broth, soy sauce, and fish sauce. Bring to a boil.
- Reduce heat and simmer for 1.5 hours until beef is tender.
- Cook rice noodles according to package instructions.
- In bowls, place cooked noodles and ladle the beef soup over them.
- Garnish with cilantro and green onions.
Notes
- Adjust seasoning to taste.
- For a spicier soup, add chili peppers.
