Description
Beef Giouvetsi is a traditional Greek dish featuring tender beef and orzo pasta cooked in a rich tomato sauce. It’s hearty, flavorful, and perfect for a comforting meal.

- 1 kg beef (chuck or stew meat), cubed
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 400 g orzo pasta
- 400 g canned crushed tomatoes
- 2 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1/2 cup grated Kefalotyri or Parmesan cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the beef and brown on all sides. Remove and set aside.
- In the same pot, sauté the onion until soft. Add garlic and cook for 1 minute.
- Return the beef to the pot. Stir in crushed tomatoes, beef broth, oregano, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours or until beef is tender.
- Add orzo pasta and stir well. Cook for another 10-12 minutes until pasta is al dente.
- Remove the bay leaf. Serve hot, sprinkled with grated cheese if desired.
Notes
- For a richer flavor, sear the beef in batches to avoid overcrowding the pot.
- If the sauce thickens too much, add a splash of water or broth.
- Leftovers can be stored in the fridge for up to 3 days.
