  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 1 cup mixed vegetables (carrots, potatoes, bell peppers)
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the beef fillet with salt, pepper, and 1 tbsp olive oil.
  3. Sear the beef in a hot pan for 2-3 minutes per side.
  4. Transfer the beef to a baking dish and roast for 15-20 minutes for medium-rare.
  5. Toss the vegetables with 1 tbsp olive oil, thyme, salt, and pepper. Roast for 20 minutes.
  6. In the same pan, sauté garlic until fragrant. Add Dijon mustard, honey, Worcestershire sauce, and beef broth. Simmer for 5 minutes.
  7. Slice the beef and serve with the sauce and roasted vegetables.
