Description
Beef enchiladas are rolled tortillas filled with seasoned beef and topped with sauce and cheese.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cups enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat oven to 350°F.
- In a skillet, cook ground beef and onion until browned.
- Stir in cumin, chili powder, and salt.
- Fill each tortilla with beef mixture and roll up.
- Place rolled tortillas in a baking dish.
- Pour enchilada sauce over the top.
- Sprinkle cheese on top.
- Bake for 20 minutes until cheese is melted.
Notes
- Serve with sour cream or guacamole.
- Can substitute ground turkey for beef.
- Store leftovers in an airtight container.
