A hearty and flavorful beef enchilada casserole that layers tortillas, beef, cheese, and enchilada sauce.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 cup black beans, drained
  • 1 cup corn, drained
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion until browned.
  3. Stir in the cumin, chili powder, and salt.
  4. Layer 4 tortillas in a baking dish.
  5. Add half of the beef mixture on top of the tortillas.
  6. Pour half of the enchilada sauce over the beef.
  7. Add half of the black beans and corn.
  8. Sprinkle with cheese.
  9. Repeat the layers with the remaining ingredients.
  10. Bake for 25-30 minutes until bubbly.

Notes

  • Feel free to add more vegetables like bell peppers.
  • Top with fresh cilantro or sour cream before serving.
