A hearty and flavorful beef enchilada casserole that layers tortillas, beef, cheese, and enchilada sauce.
Ingredients

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese
- 1 cup black beans, drained
- 1 cup corn, drained
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion until browned.
- Stir in the cumin, chili powder, and salt.
- Layer 4 tortillas in a baking dish.
- Add half of the beef mixture on top of the tortillas.
- Pour half of the enchilada sauce over the beef.
- Add half of the black beans and corn.
- Sprinkle with cheese.
- Repeat the layers with the remaining ingredients.
- Bake for 25-30 minutes until bubbly.
Notes
- Feel free to add more vegetables like bell peppers.
- Top with fresh cilantro or sour cream before serving.
