Ingredients

- 2 pounds of beef (chuck or brisket)
- 1 tablespoon of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 carrots, sliced
- 4 potatoes, cubed
- 2 cups of beef broth
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Brown the beef on all sides.
- Add carrots, potatoes, beef broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2 hours or until beef is tender.
- Remove bay leaf before serving.
