Ingredients

  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 2 cups of beef broth
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until soft.
  3. Brown the beef on all sides.
  4. Add carrots, potatoes, beef broth, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 2 hours or until beef is tender.
  7. Remove bay leaf before serving.
