Ingredients

- 3–4 lbs beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 carrots, chopped
- 2 potatoes, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 bay leaf
Instructions
- Preheat your oven to 325°F (165°C).
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef roast on all sides.
- Add onions and garlic, sauté until soft.
- Pour in beef broth and add carrots, potatoes, salt, pepper, thyme, and bay leaf.
- Cover and transfer pot to the oven.
- Cook for 3-4 hours until the beef is tender.
- Remove from oven and let rest before slicing.
Notes
- Adjust seasoning to taste.
- Serve with your choice of sides.
- Store leftovers in the refrigerator for up to 3 days.
