  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 carrots, chopped
  • 2 potatoes, diced

  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Heat olive oil in a large pot over medium-high heat.
  3. Brown the beef roast on all sides.
  4. Add onions and garlic, sauté until soft.
  5. Pour in beef broth and add carrots, potatoes, salt, pepper, thyme, and bay leaf.
  6. Cover and transfer pot to the oven.
  7. Cook for 3-4 hours until the beef is tender.
