Ingredients

- 3–4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C).
- Heat olive oil in a large pot over medium-high heat.
- Season the roast with salt and pepper, then sear on all sides.
- Remove the roast and set aside.
- Add onion and garlic to the pot, sauté until soft.
- Add carrots and potatoes, stir to combine.
- Return the roast to the pot.
- Pour beef broth and Worcestershire sauce over the roast.
- Add thyme and adjust seasoning.
- Cover and transfer to the oven, cook for 3-4 hours or until tender.
