Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Heat olive oil in a large pot over medium-high heat.
  3. Season the roast with salt and pepper, then sear on all sides.
  4. Remove the roast and set aside.
  5. Add onion and garlic to the pot, sauté until soft.
  6. Add carrots and potatoes, stir to combine.
  7. Return the roast to the pot.
  8. Pour beef broth and Worcestershire sauce over the roast.
  9. Add thyme and adjust seasoning.
  10. Cover and transfer to the oven, cook for 3-4 hours or until tender.
