- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
Instructions
- Preheat your oven to 325°F (163°C).
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef chuck roast on all sides.
- Add onions and garlic, cooking until softened.
- Add carrots and potatoes to the pot.
- Pour in beef broth and season with salt, pepper, thyme, and rosemary.
- Cover the pot and transfer to the oven.
- Cook for 3 to 4 hours, or until the beef is tender.
- Remove from oven and let rest before slicing.
- Serve warm with vegetables and broth.
