Ingredients

- 3–4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Season the beef with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear the beef on all sides until browned.
- Add chopped onion, carrots, and potatoes to the pot.
- Stir in garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 3-4 hours until the beef is tender.
- Remove beef and let it rest before slicing.
- Serve with the vegetables and broth.
Notes
- For added flavor, marinate the beef overnight.
- Use a slow cooker for an easier method.
