- 2 lbs ground beef
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 (15 oz) cans kidney beans, drained and rinsed
- 2 (15 oz) cans diced tomatoes
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- 1 cup beef broth
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spoon, about 7-10 minutes.
- Drain any excess fat from the pot. Stir in the chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). Cook for 2 minutes to toast the spices.
- Add the diced tomatoes, kidney beans, and beef broth. Bring to a boil, then reduce heat to low and simmer uncovered for 30-45 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot with your choice of toppings.
Notes
- For a thicker chili, let it simmer longer to reduce the liquid.
- Top with shredded cheese, sour cream, or diced green onions for extra flavor.
- This chili can be made ahead of time and tastes even better the next day.
