A hearty beef casserole with tender potatoes, perfect for a comforting meal.
Ingredients

- 500g beef, cubed
- 4 medium potatoes, peeled and sliced
- 1 onion, diced
- 2 carrots, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 180°C (350°F).
- Heat olive oil in a pan and brown the beef on all sides. Remove and set aside.
- In the same pan, sauté onions, carrots, and garlic until softened.
- Add tomato paste, thyme, rosemary, salt, and pepper. Stir well.
- Transfer beef and vegetables to a casserole dish. Add potatoes and beef broth.
- Cover and bake for 1.5 hours or until beef and potatoes are tender.
- Serve hot.
Notes
- For extra flavor, add a splash of red wine.
- Store leftovers in an airtight container for up to 3 days.
