Ingredients

  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add beef cubes and brown on all sides.
  4. Add onion, garlic, carrots, and potatoes; cook for 5 minutes.
  5. Stir in diced tomatoes, beef broth, tomato paste, thyme, salt, and pepper.
  6. Bring to a simmer, then transfer to a casserole dish.
  7. Cover with a lid or foil and bake for 2 hours.
