Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Add beef cubes and brown on all sides.
- Add onion, garlic, carrots, and potatoes; cook for 5 minutes.
- Stir in diced tomatoes, beef broth, tomato paste, thyme, salt, and pepper.
- Bring to a simmer, then transfer to a casserole dish.
- Cover with a lid or foil and bake for 2 hours.
- Remove from oven and let it rest for 10 minutes before serving.
Notes
- Serve with crusty bread.
- Can be made a day ahead and reheated.
