Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add beef cubes and brown on all sides.
  4. Remove beef and add onion and garlic to the skillet.
  5. Sauté until onion is translucent.
  6. Add carrots and potatoes, stirring to combine.
  7. Return beef to the skillet.
  8. Add beef broth, diced tomatoes, tomato paste, thyme, salt, and pepper.
  9. Bring to a boil, then reduce heat and simmer for 10 minutes.
  10. Transfer the mixture to a casserole dish.
  11. Cover with a lid or foil and bake for 2 hours.
  12. Serve hot and enjoy.
