- 2 pounds beef stew meat, cut into cubes
- 1 onion, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 2 cups beef broth
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and add onion and garlic to the skillet.
- Sauté until onion is translucent.
- Add carrots and potatoes, stirring to combine.
- Return beef to the skillet.
- Add beef broth, diced tomatoes, tomato paste, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Transfer the mixture to a casserole dish.
- Cover with a lid or foil and bake for 2 hours.
- Serve hot and enjoy.
Notes
- Feel free to add other vegetables like peas or green beans.
- This dish can be made ahead and reheated.
