- 1 lb chuck roast, cut into cubes
- 1 cup barley
- 2 carrots, diced
- 2 celery stalks, diced

- 6 cups beef broth

Instructions
- Heat olive oil in a large pot over medium heat.
- Add the cubed beef and brown on all sides.
- Remove the beef and set aside.
- In the same pot, add onions, carrots, and celery, and sauté until softened.
- Return the beef to the pot and add the barley.
- Pour in the beef broth and bring to a boil.
- Reduce heat and let it simmer for at least an hour.
- Taste and adjust seasoning with salt and pepper.
