A hearty and nutritious beef and vegetable soup that’s easy to make. Packed with protein and fresh vegetables, it’s a perfect meal for any season.
Ingredients

- 500g beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 cups water
- 2 potatoes, diced
- 1 cup green beans, trimmed and cut
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Remove beef and set aside.
- In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes.
- Add garlic and cook for 1 more minute.
- Return beef to the pot.
- Pour in beef broth and water.
- Add potatoes, green beans, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes until beef is tender.
- Remove bay leaf before serving.
Notes
- Cut beef and vegetables in uniform sizes for even cooking.
- For extra flavor, sear the beef in batches.
- You can use low-sodium broth if preferred.
