Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1/2 cup tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers and remove seeds.
  3. Heat oil in a pan and cook onions until soft.
  4. Add garlic and beef, cook until browned.
  5. Mix in rice, tomato sauce, salt, pepper, and paprika.
  6. Stuff peppers with beef mixture.
  7. Place peppers in a baking dish.
  8. Top with shredded cheese.
  9. Bake for 25 minutes or until peppers are tender.
  10. Serve hot.
