Ingredients

- 1 cup dried beans (any variety)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Soak the beans overnight in water.
- Drain and rinse the beans.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until softened.
- Add soaked beans, diced tomatoes, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Season with salt and pepper.
- Serve hot.
Notes
- You can use canned beans for a quicker option.
- Feel free to add other vegetables.
- Store leftovers in the fridge for up to 3 days.
