Ingredients

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Soak the beans overnight in water.
  2. Drain and rinse the beans.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion, garlic, carrot, and celery. Sauté until softened.
  5. Add soaked beans, diced tomatoes, vegetable broth, cumin, and paprika.
  6. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
  7. Season with salt and pepper.
  8. Serve hot.
