Ingredients

- 2 cups of mixed beans, soaked overnight
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked beans.
- In a pot, sauté onion and garlic until soft.
- Add carrot and celery, cooking for another 5 minutes.
- Add beans, broth, and cumin. Bring to a boil.
- Reduce heat and simmer for 1 hour, or until beans are tender.
- Season with salt and pepper.
- Serve hot, garnished with parsley.

- Adjust seasoning as needed.
- Can be blended for a smoother texture.
- Store leftovers in the fridge for up to 3 days.
