Ingredients

- 1 head Coleslaw (shredded green cabbage)
- 2 Carrots (shredded)
- 1 cup Mayonnaise
- 2 tablespoons Apple Cider Vinegar
- 2 tablespoons Sugar
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 12 ears Corn on the Cob (husked)
- 1 cup Butter (melted)
- 1 tablespoon Chili Powder
- 3 pounds Potato Salad (cubed)
- 1/4 cup Dijon Mustard
- 1 cup Pickles (chopped)
Instructions
- In a large bowl, combine shredded cabbage and carrots.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.
- Pour the dressing over the cabbage mixture and toss until well coated.
- For the corn on the cob, bring a large pot of water to a boil. Add corn and cook for 5-7 minutes until tender.
- Remove corn and brush with melted butter, then sprinkle with chili powder.
- For the potato salad, boil cubed potatoes until tender, drain and let cool.
- In a large bowl, mix potatoes, Dijon mustard, and pickles, then season with salt and pepper to taste.
