  • 1 head Coleslaw (shredded green cabbage)
  • 2 Carrots (shredded)
  • 1 cup Mayonnaise
  • 2 tablespoons Apple Cider Vinegar
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 12 ears Corn on the Cob (husked)
  • 1 cup Butter (melted)
  • 1 tablespoon Chili Powder
  • 3 pounds Potato Salad (cubed)
  • 1/4 cup Dijon Mustard
  • 1 cup Pickles (chopped)

Instructions

  1. In a large bowl, combine shredded cabbage and carrots.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.
  3. Pour the dressing over the cabbage mixture and toss until well coated.
  4. For the corn on the cob, bring a large pot of water to a boil. Add corn and cook for 5-7 minutes until tender.
  5. Remove corn and brush with melted butter, then sprinkle with chili powder.
  6. For the potato salad, boil cubed potatoes until tender, drain and let cool.
  7. In a large bowl, mix potatoes, Dijon mustard, and pickles, then season with salt and pepper to taste.
