- 1 lb boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a slow cooker, add the chicken breasts and pour the BBQ sauce over the top. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once the chicken is cooked, shred it with two forks and mix it with the BBQ sauce in the slow cooker.
- Warm the tortillas in a skillet or microwave until pliable.
- Assemble the tacos: place a generous amount of BBQ chicken in the center of each tortilla.
- Top with shredded lettuce, diced tomatoes, shredded cheese, and cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
