  • 1 cup coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Sliced pickles (optional)
  • Sliced onions (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. In the last few minutes of grilling, brush the BBQ sauce over the chicken.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  6. While the chicken is resting, mix the coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper in a bowl.
  7. Slice the grilled chicken into strips or shred it.
  8. Assemble the sandwiches by placing the chicken on the bottom half of the bun, adding more BBQ sauce if desired, and topping with the coleslaw mix.
  9. Add pickles and onions if using, then place the top half of the bun on.
  10. Serve immediately and enjoy!
