- 2 large flour tortillas
- 1 cup cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1 tbsp butter or oil for cooking
Instructions
- Mix shredded chicken with BBQ sauce in a bowl.
- Heat a skillet over medium heat and add butter or oil.
- Place one tortilla in the skillet and sprinkle half the cheese evenly.
- Spread the BBQ chicken mixture over the cheese.
- Add red onion and cilantro on top.
- Sprinkle the remaining cheese and cover with the second tortilla.
- Cook for 2-3 minutes until the bottom is golden brown, then flip.
- Cook the other side for 2-3 minutes until crispy and cheese is melted.
- Remove from heat, slice into wedges, and serve.
Notes
- Use pre-cooked rotisserie chicken for convenience.
- Adjust BBQ sauce quantity to taste.
- Add jalapeños for extra heat.
