Description

BBQ chicken grilled cheese sandwiches combine tender chicken, smoky BBQ sauce, and melted cheese between crispy toasted bread for a hearty meal.


Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded (about 2 cups)
  • 1/2 cup BBQ sauce
  • 4 slices cheddar cheese
  • 4 slices bread (sourdough or Texas toast recommended)
  • 2 tbsp butter, softened
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Mix shredded chicken with BBQ sauce in a bowl.
  2. Heat a skillet or griddle over medium heat.
  3. Butter one side of each bread slice.
  4. Place two slices butter-side down on the skillet.
  5. Layer each with one slice of cheese, BBQ chicken, red onion (if using), and another slice of cheese.
  6. Top with remaining bread slices, butter-side up.
  7. Cook for 3–4 minutes per side until golden brown and cheese melts.
  8. Remove from heat, slice, and garnish with cilantro if desired.

Notes

  • Use leftover rotisserie chicken for quicker prep.
