- 1 lb (450g) shrimp, peeled and deveined
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp honey
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Oil for frying
- Green onions, chopped (for garnish)
Instructions
- Pat shrimp dry and season with salt and pepper.
- Dredge shrimp in cornstarch, dip in beaten eggs, then coat with panko breadcrumbs.
- Heat oil in a pan over medium-high heat and fry shrimp until golden (2-3 minutes per side). Drain on paper towels.
- Mix mayonnaise, sweet chili sauce, sriracha, honey, garlic powder, and paprika in a bowl.
- Toss fried shrimp in the sauce until evenly coated.
- Garnish with chopped green onions and serve immediately.
Notes
- For extra crispiness, double-coat the shrimp in breadcrumbs.
- Adjust sriracha for more or less heat.
- Serve over rice or in lettuce wraps for a lighter option.
