Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Oil for frying
  • Green onions, chopped (for garnish)

Instructions

  1. Pat shrimp dry and season with salt and pepper.
  2. Dredge shrimp in cornstarch, dip in beaten eggs, then coat with panko breadcrumbs.
  3. Heat oil in a pan over medium-high heat and fry shrimp until golden (2-3 minutes per side). Drain on paper towels.
  4. Mix mayonnaise, sweet chili sauce, sriracha, honey, garlic powder, and paprika in a bowl.
  5. Toss fried shrimp in the sauce until evenly coated.
  6. Garnish with chopped green onions and serve immediately.

Notes

  • For extra crispiness, double-coat the shrimp in breadcrumbs.
  • Adjust sriracha for more or less heat.
  • Serve over rice or in lettuce wraps for a lighter option.
