Ingredients

  • 2 boneless, skinless chicken fillets (cut into strips)
  • 1 cup panko breadcrumbs
  • 1 egg (beaten)
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey
  • 1 tbsp vegetable oil (for frying)

Instructions

  1. Season chicken with salt and pepper.
  2. Coat chicken in flour, dip in egg, then coat with panko breadcrumbs.
  3. Heat oil in a pan and fry chicken until golden and cooked through.
  4. Mix mayonnaise, sweet chili sauce, sriracha, and honey to make bang bang sauce.
  5. Slice cooked chicken into strips.
  6. Assemble bowl with lettuce, carrots, cucumbers, and chicken.
  7. Drizzle with bang bang sauce and garnish with green onions.
