These banana oatmeal muffins are naturally sweetened and healthy, made without flour or sugar. Perfect for a quick breakfast or snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp honey (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mash the bananas until smooth.
  3. Add oats, applesauce, egg, vanilla, cinnamon, baking powder, and salt. Mix well.
  4. If using, stir in honey and nuts.
  5. Divide the batter into a greased muffin tin, filling each cup halfway.
  6. Bake for 20-25 minutes until golden and set.
  7. Let cool before serving.
