Ingredients

- 2 medium sweet potatoes
- 1/2 lb ground turkey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1 tbsp olive oil
- 1 ripe avocado
- 2 tbsp Greek yogurt
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- 1/4 tsp salt
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork. Bake for 45-50 minutes or until tender.
- Heat olive oil in a pan over medium heat. Add ground turkey, salt, pepper, garlic powder, paprika, and cumin. Cook until browned, about 8-10 minutes.
- In a bowl, mash avocado with Greek yogurt, lime juice, cilantro, and salt to make the dressing.
- Slice open baked sweet potatoes and fill with ground turkey. Top with avocado dressing.
- Serve warm.
Notes
- Use lean ground turkey for a healthier option.
- For extra flavor, add diced onions and bell peppers to the turkey.
