Ingredients

  • 2 medium sweet potatoes
  • 1/2 lb ground turkey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1 tbsp olive oil
  • 1 ripe avocado
  • 2 tbsp Greek yogurt
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork. Bake for 45-50 minutes or until tender.
  3. Heat olive oil in a pan over medium heat. Add ground turkey, salt, pepper, garlic powder, paprika, and cumin. Cook until browned, about 8-10 minutes.
  4. In a bowl, mash avocado with Greek yogurt, lime juice, cilantro, and salt to make the dressing.
  5. Slice open baked sweet potatoes and fill with ground turkey. Top with avocado dressing.
  6. Serve warm.
