Description

Ingredients

  • 2 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes and pierce them with a fork.
  3. Bake sweet potatoes for 45-50 minutes until tender.
  4. Heat olive oil in a skillet over medium heat.
  5. Add ground turkey and cook until browned.
  6. Season with salt, pepper, garlic powder, and paprika.
  7. Slice open baked sweet potatoes and fluff the insides.
  8. Top with cooked ground turkey and shredded cheddar cheese.
  9. Return to oven for 2-3 minutes until cheese melts.
  10. Garnish with parsley if desired and serve.
