- 2 medium sweet potatoes
- 1 lb ground turkey
- 1 tsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 cup shredded cheddar cheese
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes and pierce them with a fork.
- Bake sweet potatoes for 45-50 minutes until tender.
- Heat olive oil in a skillet over medium heat.
- Add ground turkey and cook until browned.
- Season with salt, pepper, garlic powder, and paprika.
- Slice open baked sweet potatoes and fluff the insides.
- Top with cooked ground turkey and shredded cheddar cheese.
- Return to oven for 2-3 minutes until cheese melts.
- Garnish with parsley if desired and serve.
