Ingredients

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lb ground turkey
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry sweet potatoes, then pierce with a fork.
  3. Rub with olive oil, salt, and pepper, then bake for 45-50 minutes until tender.
  4. While potatoes bake, cook ground turkey in a pan over medium heat.
  5. Add cumin, paprika, garlic powder, and onion powder. Stir and cook until browned.
  6. In a bowl, mix avocado, tomatoes, red onion, cilantro, and lime juice to make salsa.
  7. Slice open baked sweet potatoes, fluff with a fork, and fill with ground turkey.
  8. Top with avocado salsa and serve immediately.

Notes

  • For extra flavor, add a pinch of chili powder to the ground turkey.
  • Swap ground turkey for ground chicken or beef if preferred.
