Ingredients

- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lb ground turkey
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 avocado, diced
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry sweet potatoes, then pierce with a fork.
- Rub with olive oil, salt, and pepper, then bake for 45-50 minutes until tender.
- While potatoes bake, cook ground turkey in a pan over medium heat.
- Add cumin, paprika, garlic powder, and onion powder. Stir and cook until browned.
- In a bowl, mix avocado, tomatoes, red onion, cilantro, and lime juice to make salsa.
- Slice open baked sweet potatoes, fluff with a fork, and fill with ground turkey.
- Top with avocado salsa and serve immediately.
Notes
- For extra flavor, add a pinch of chili powder to the ground turkey.
- Swap ground turkey for ground chicken or beef if preferred.
- Store leftovers in an airtight container for up to 2 days.
