- 2 medium sweet potatoes
- 1/2 lb ground turkey
- 2 cups fresh spinach, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup shredded cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes and poke holes with a fork. Bake for 45-50 minutes until tender.
- Heat olive oil in a pan over medium heat. Add ground turkey and cook until browned.
- Add spinach, garlic powder, onion powder, salt, and pepper. Cook until spinach wilts.
- Cut open baked sweet potatoes and stuff with turkey and spinach mixture.
- Top with shredded cheese if desired and return to oven for 5 minutes to melt.
- Serve warm.
