A simple and nutritious meal featuring baked sweet potatoes stuffed with seasoned ground turkey and roasted bell peppers.
Ingredients

- 2 medium sweet potatoes
- 1 lb ground turkey
- 1 red bell pepper, diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry sweet potatoes. Poke holes in them with a fork.
- Place sweet potatoes on a baking sheet and bake for 45-50 minutes, until tender.
- While sweet potatoes bake, heat olive oil in a pan over medium heat.
- Add ground turkey and cook until browned, breaking it into small pieces.
- Add diced bell pepper, garlic powder, onion powder, paprika, salt, and black pepper. Cook for 5-6 minutes.
- When sweet potatoes are done, slice them open and fluff the inside with a fork.
- Fill each sweet potato with the turkey and bell pepper mixture.
- Garnish with chopped parsley before serving.
Notes
- For extra flavor, add a sprinkle of grated cheese on top.
- Leftovers can be stored in the fridge for up to 3 days.
