- 2 medium sweet potatoes
- 1 lb ground turkey
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1 tbsp butter
- 1 tbsp all-purpose flour
Instructions
- Preheat oven to 400°F.
- Wash sweet potatoes, prick with a fork, and bake for 45-50 minutes until tender.
- Heat olive oil in a pan over medium heat.
- Add ground turkey and cook until browned.
- Season with salt, pepper, garlic powder, onion powder, and paprika.
- In a small saucepan, melt butter, whisk in flour, and cook for 1 minute.
- Gradually add milk, stirring until thickened.
- Add shredded cheese and stir until melted.
- Slice baked sweet potatoes open and fill with ground turkey.
- Drizzle cheese sauce over the top and serve.
Notes
- For a spicier version, add a pinch of cayenne pepper to the turkey.
- Substitute ground chicken or beef if preferred.
- Use gluten-free flour if needed.
