- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 medium potatoes, cubed
- 2 tbsp olive oil
- 1/2 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss potato cubes with olive oil, paprika, and a pinch of salt. Spread on a baking sheet.
- In a bowl, mix breadcrumbs, parmesan, garlic powder, oregano, salt, and pepper.
- Dip chicken breasts in beaten egg, then coat with breadcrumb mixture.
- Place chicken on the same baking sheet as the potatoes.
- Bake for 20 minutes, then flip chicken and stir potatoes.
- Top chicken with marinara sauce and mozzarella cheese.
- Bake for another 10 minutes or until chicken is fully cooked and cheese is melted.
- Serve hot with golden potato cubes.
Notes
- Use panko breadcrumbs for extra crispiness.
- Let chicken rest for 5 minutes before serving.
- Substitute sweet potatoes for a different flavor.
