Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 medium potatoes, cubed
  • 2 tbsp olive oil
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potato cubes with olive oil, paprika, and a pinch of salt. Spread on a baking sheet.
  3. In a bowl, mix breadcrumbs, parmesan, garlic powder, oregano, salt, and pepper.
  4. Dip chicken breasts in beaten egg, then coat with breadcrumb mixture.
  5. Place chicken on the same baking sheet as the potatoes.
  6. Bake for 20 minutes, then flip chicken and stir potatoes.
  7. Top chicken with marinara sauce and mozzarella cheese.
  8. Bake for another 10 minutes or until chicken is fully cooked and cheese is melted.
  9. Serve hot with golden potato cubes.

  • Use panko breadcrumbs for extra crispiness.
