A hearty and flavorful baked burrito casserole that combines layers of tortillas, beans, cheese, and spices. Perfect for a family dinner or meal prep.

- 6 large flour tortillas
- 2 cups cooked black beans
- 1 cup cooked rice
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup salsa
- 1/2 cup sour cream
- 1 tablespoon taco seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the black beans, rice, corn, diced tomatoes, taco seasoning, salt, and pepper.
- Layer half of the tortillas in the bottom of a greased baking dish.
- Spread half of the bean mixture over the tortillas.
- Sprinkle half of the cheeses on top.
- Repeat the layers with the remaining tortillas, bean mixture, and cheeses.
- Spread the salsa evenly over the top layer.
- Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for 5 minutes.
- Serve with a dollop of sour cream on top.
Notes
- You can use corn tortillas if you prefer.
- Add cooked ground beef or shredded chicken for extra protein.
- Store leftovers in an airtight container in the fridge for up to 3 days.
