- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup chopped bell peppers
- 1 cup corn
- 1 cup chopped spinach
- 1 tablespoon olive oil
- Salsa for serving
Instructions
- Heat a large skillet over medium heat.
- Add olive oil to the skillet.
- Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella cheese on one half of the tortilla.
- Add chopped bell peppers, corn, and spinach on top of the cheese.
- Sprinkle the remaining cheese over the vegetables.
- Fold the tortilla in half to cover the filling.
- Cook for 3-4 minutes until the bottom is golden brown.
- Flip the quesadilla carefully and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet and let it cool slightly before cutting into wedges.
- Serve with salsa on the side.
