Description

These Cheesy Veggie Quesadillas combine nutritious vegetables with gooey cheese, making them a perfect after-school snack or lunch option that kids will love.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped bell peppers
  • 1 cup corn
  • 1 cup chopped spinach
  • 1 tablespoon olive oil
  • Salsa for serving

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil to the skillet.
  3. Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella cheese on one half of the tortilla.
  4. Add chopped bell peppers, corn, and spinach on top of the cheese.
  5. Sprinkle the remaining cheese over the vegetables.
  6. Fold the tortilla in half to cover the filling.
  7. Cook for 3-4 minutes until the bottom is golden brown.
  8. Flip the quesadilla carefully and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  9. Remove from the skillet and let it cool slightly before cutting into wedges.
  10. Serve with salsa on the side.
