Ingredients

- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup toasted sesame seeds
- 1/4 cup chopped peanuts
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 clove garlic, minced
- 1 tsp grated ginger
Instructions
- In a large bowl, combine cabbage, carrots, bell pepper, cucumber, cilantro, and green onions.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger.
- Pour the dressing over the salad and toss to coat evenly.
- Sprinkle sesame seeds and chopped peanuts on top.
- Serve immediately or refrigerate for up to 2 hours before serving.
