Description
A refreshing and tangy Asian cucumber salad that’s quick to make and perfect as a side dish.
Ingredients

- 2 medium cucumbers, thinly sliced
- 1/4 cup rice vinegar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes
- 1 tbsp toasted sesame seeds
- 2 green onions, thinly sliced
Instructions
- Slice cucumbers thinly and place them in a bowl.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, garlic, and red pepper flakes.
- Pour the dressing over the cucumbers and toss well.
- Sprinkle with sesame seeds and green onions.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For extra crunch, use English cucumbers.
- Adjust red pepper flakes for more or less heat.
- Best served cold.
