- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons vegetable oil
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, combine sliced chicken with soy sauce, sesame oil, cornstarch, salt, and pepper. Let marinate for 15 minutes.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the mixed vegetables and stir-fry for 3-5 minutes until tender-crisp.
- Return the cooked chicken to the skillet. Stir everything together and cook for an additional 2 minutes.
- Serve hot over cooked rice or noodles.

- Feel free to customize the vegetables based on your preference.
- For added flavor, you can top with sesame seeds or green onions before serving.
