  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. In a bowl, combine sliced chicken with soy sauce, sesame oil, cornstarch, salt, and pepper. Let marinate for 15 minutes.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the mixed vegetables and stir-fry for 3-5 minutes until tender-crisp.
  5. Return the cooked chicken to the skillet. Stir everything together and cook for an additional 2 minutes.
  6. Serve hot over cooked rice or noodles.
