Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together milk, maple syrup, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Fold in the diced apples and chopped walnuts if using.

- Scoop the oatmeal mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
