- 2 cups apple cider
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Oil for frying
- Cinnamon sugar for coating
Instructions
- In a saucepan, bring the apple cider to a boil over medium heat and reduce it to about 1 cup, then let it cool.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the eggs, melted butter, vanilla extract, and the reduced apple cider until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
- Chill the dough for at least an hour in the refrigerator.
- Heat oil in a deep fryer or large pot to 350°F to 375°F.
- Roll out the dough on a floured surface to about 1/2 inch thick and cut out donuts using a donut cutter.
- Carefully place the donuts into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the donuts from the oil and let them drain on paper towels.
- Coat the warm donuts in cinnamon sugar immediately after frying.
- Serve fresh or store in an airtight container.
