- 4 lbs beef short ribs
- 2 cups apple cider
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 2 cups beef broth
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F.
- Season short ribs with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat. Sear ribs until browned on all sides. Remove and set aside.
- Add onion, garlic, carrots, and celery to the pot. Cook until softened.
- Stir in tomato paste, thyme, and rosemary.
- Pour in apple cider and beef broth, scraping up browned bits.
- Return ribs to the pot, cover, and braise in the oven for 3 hours or until tender.
- Remove ribs and strain the sauce. Skim off excess fat.
- Serve ribs with sauce.
Notes
- For deeper flavor, marinate ribs overnight.
- Use a good-quality apple cider for best results.
- Serve with mashed potatoes or polenta.
