Ingredients

- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine all the vegetables.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Toss until all vegetables are evenly coated.
- Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 10-15 minutes, shaking the basket halfway through cooking to ensure even cooking.
- Once the vegetables are crispy and tender, remove them from the air fryer and serve immediately.
Notes
- Feel free to use any combination of your favorite vegetables.
- Adjust the cooking time based on the size of the vegetable pieces.
- For added flavor, add some grated Parmesan cheese before serving.
